Zucchini Fritters

This meal can only be made easy with pumpkin and eggs. You can easily implement this recipe.


  • 1 egg
  • 3 tablespoons chickpea flour
  • 1 teaspoon salt
  • 2 and 1/2 cups grated and squeezed zucchini
  • 2 cloves garlic, mashed
  • 1/2 cup grated mozzarella
  • 1 tablespoon olive oil for each frying

Tomato sauce:

  • 4 tomatoes, pureed
  • 1 tablespoon olive oil
  • 2 cloves garlic, mashed
  • 1 teaspoon salt


  • Beat egg well. Whisk in chickpea flour and salt.
  • Add grated zucchini and mashed garlic give it a good stir.
  • Fold in grated mozzarella.
  • Heat olive oil in a pano ver medium high heat. Place spoonful of batter for each fritter, flatten with a spatula and fry about 2 minutes or until the bottom gets golden. Flip and cook the other side about 1-2 minutes or until golden.
  • Transfer on a paper towel.

Tomato sauce:

  • Heat olive oil in a pot.
  • Give the pureed tomato simmer. Add in salt and mashed garlic. Cook until it thickens.
  • Serve fritters with the tomato sauce.
